The olives have now been picked from the trees and only the best will be covered in salt to extract the bitterness from the olives.
Only then will they be gently put into jars topped up with biological Extra Virgin Olive oil and garlic to be enjoyed at leisure. Yummy! And the oil full of the olive flavour is delicious as a dressing on a salad.
